1-2 ounces of Crumbled Blue Cheese
6 Ounces of Extra Sharp White Cheddar
12 Ounces of Medium Yellow Cheddar
2-4 ounces of Dark Porter or a Dark Ale, something with a nutty flavor works best
6-10 cloves of Garlic
2-3 dashes of onion powder
Mince garlic. Grate Cheeses. Put half of cheese, garlic and ale into a blender. Blend until smooth. Add rest of ingredients, blend until most the pieces of broken down. The resulting mixture should be creamy with chunks in it. Put into a container in the fridge for 2-3 hours until hard.
For variety I've rolled it in chopped almonds and served as a cheese log. Another good addition is blue cheese or garlic stuffed olives.
